Smoked Trout Dip 

Low in mercury and high in flavor, smoked rainbow trout from Fishwife is delicious straight out of the can, but a little glow up with fresh herbs and creamy mayo takes it to the next level. 

Set it out with potato chips or crostini at your next party, or dollop onto mixed greens for a hearty lunch time salad. It’s also lovely spread between sliced bread for tea sandwiches or simple weekday lunches. 

Ingredients 

2 tablespoons plus 1 teaspoon Celebrate What You Eat Gin Mayo 

1 tablespoon chopped fresh dill 

1 tablespoon chopped fresh parsley 

1 tablespoon fresh Eureka lemon juice or white wine vinegar

3-2.8 oz cans Fishwife Smoked Rainbow Trout 

Salt & freshly ground pepper 

Makes 1 cup 

5 minutes active time 

5 minutes total time 

Stir together the mayo, chopped herbs and lemon juice (or vinegar, if using). Fold in the smoked rainbow trout, including the oil that it is packed in. Season to taste with salt and freshly ground pepper.
