Since chives have a milder flavor, they're perfect to add to soups, dips, mashed or baked potatoes, fish, seafood dishes and omelets. This delicate member of the allium family gives a pungent, oniony flavor to anything it adorns. Try chipping into 1mm-long pieces and sprinkling on your next omelette or mashed potatoes. Chives are smaller, thinner, and more delicate than green onions, and they don't have an edible bulb at the bottom.
