This is a version of the first salad dressing Golden State Pickle Works made. As Golden State Pickle Works learned about fermentation, vegetables didn’t always turn out the way wanted. Over fermenting is common, and change is bound to happen, so Golden State Pickle Works had to figure out a way to use products that couldn’t sell in a jar. The solution – squishy cucumbers got pureed. Golden State Pickle Works take that puree and turned it into a mayonnaise. In the new version, Golden State Pickle Works add that to cashew cream and finish with fresh chopped dill. Now Golden State Pickle Works have our take on the classic ranch dressing.
Ingredients: avocado oil*, high-oleic safflower and/or sunflower oil*, allium brine* (water, salt, fennel*, onion*, garlic*), fermented cucumber puree* (cucumber*, water, garlic*, dill*, salt, chili flake), cashews*, whole egg*, dill*, distilled white vinegar, salt.
