Encina Farms is the first grower to raise Ibérico pigs exclusively on the West Coast, using traditional Spanish practices and methods to ensure the highest quality standards.

The pigs at Encina Farms spend their lives roaming freely on the 1,200 acre ranch in the Coyote Valley of Middletown, California, where they have access to over 600 acres of oak forests. The oak tree, which produces acorns or “bellotas”, is essential to the diet of the Ibérico pig and is the reason why the Co-Founders, Alberto Soilis & Helmut Drews, chose to raise the pigs on land blanketed by oak trees. In the later part of their life, the pigs are fed acorns, which contain 70% oleic acid, similar to olives, ensuring the fat in the pork is of great quality and has healthy qualities.

Encina Farms is dedicated to free range and humane farming, and uses no antibiotics or hormones.
