Encina Farms raise 100% pure Iberico pigs, famous in Spain for their rich flavor and tender meat. They are the only producer raising Iberico pigs in California, producing fresh cuts like this pork belly that comes from the underside of the pig. The belly is naturally fattier than most other cuts of pork, so it’s even richer in the nutty flavor of Ibérico. Pork belly is ideal for roasting. Season with salt, pepper, and a bit of pimento, or Spanish paprika, and wrap in aluminum foil. Slow roast at 300 degrees for several hours. This is a great cut for sandwiches and ramen. If there are any leftovers, cut into cubes and toss with pasta for a quick weeknight dinner.
