Merguez is Encina Farms' spiciest sausage. Though it's usually made with lamb, they make theirs with grass finished beef combined with their iberico pork. The heat is balanced by the slight sweetness of the typical northern African spices with a touch of citrus! Best grilled over low heat or simmered in a cast iron skillet to experience one of the finest sausages we have ever tried. If frying to serve as a quick weeknight dinner, we recommend cooking in just a ¼ inch of water until all water evaporates. Add a bit of olive oil and fry to finish. Serve with roasted potatoes and a vegetable, or cut into chunks and toss with pasta.
