Edison Grainery's Organic French Green Lentils, also known as Puy lentils, are prized for their nutty flavor and retaining a firmer texture when cooked, the rich peppery flavor and firm texture remain even after cooking. The slate green color with marbled blue flecks puts these lentils in the spotlight of any gourmet home cooked meal, making them ideal for salads and other dishes where softer red lentils won't hold up. They make an excellent addition to soups and stews as well. We recommend a 3:1 ratio of water to lentils simmered for about 30-45 minutes, scaling up or down depending on your plans for leftovers!
