Sometimes called King Oysters, King Trumpets are in the Tree Oyster family. Did you know these are heavily cultivated in China and Japan for their seafood-like flavor? Try them in your own dumpling filling! Far West Fungi cultivates theirs in Moss Landing, CA, and the resulting trumpets are dense, meaty, and buttery sweet. Great for stews and gravy, King Trumpets can take the place of Porcini or Crimini. They are great on the grill, just split in half and toss with olive oil. Cut the stem into scallops to emphasize the meatiness and pair it with a chilled Syrah.
