Amazing duck!

Used this duck for a braise and it was perfect. Don’t forget to save the fat to roast some potatoes/veg 😮‍💨

air chilled excellent

air chilled is the way to go. I've had Mary's air chilled chicken and the duck didn't disappoint. air chilled has less water content which helps when trying to dry the skin and to make it crispy during cooking

Good quality, easy to make

This was my first time roasting a whole duck. I cut off extra fat and rendered on stove. Rest of duck was salted, pricked and roasted 420 oven. Duck was a little tough but skin was crispy and very little fat. I made the bones into a nice duck broth using instant pot. I boiled down broth later with wine for duck glacé and put in freezer as a secret weapon for cooking. I will try it again with a slower roasting, lower temp method to see if I get more tender duck legs.
