This Fatted Calf bacon is made from only heritage breed pasture pork raised on small family farms. They dry cure their bacon traditionally, then slowly smoke it over a mix of apple, cherry, alder, and mesquite wood. The result is a flavorful bacon with a sweet, salty, smoky balance. The added cayenne keeps the sweet and salty at bay, gives it a nice note, and you can really taste the meat itself. This is a true milestone in the art of bacon.
