Rainbow chard is a variant of the Swiss Chard and is often overshadowed by its popular neighbor kale. Named for the vibrant coloration of its stalks, rainbow chard is a superstar in its own right, making a colorful, tasty side dish, or a nutritious addition to pasta, soup, quiches, and more. Its leaves are mild, earthy and just a tad bitter. Try rainbow chard sauteed simply with garlic and olive oil, added to a frittata, or braised.
