Our Capocollo di Dorman, named after our Dorman Street address, is a pork collar salame with paprika and white wine.

Tender and rich with a little spice, use Capocollo slices on home-made pizza (along with our bacon bits and Hillbelly Sausage), in sandwiches, mac ‘n cheese, and savory biscuits, or on charcuterie boards paired with sheep’s milk cheeses and sweet pickles.
