A truly special prosciutto from our friend Cesare Casella. He crafts his prosciutto from only heritage breed pigs such as Red Wattle, Tamworth, and Old Gloucester, that are raised across the Midwest by a network of small family farms. Utilizing heritage breeds helps to preserve both the genetic diversity and rich history and stories behind each unique breed. Plus they taste delicious! The result is a prosciutto that is sweet, complex, and nutty. The fat on this prosciutto is something to be coveted. Add some on your next cheeseboard, enjoy it on a baguette with butter and olive oil, or drape some over a burrata and persimmon salad.

Delicious but delicate
Wonderful flavor and fat on this quality prosciutto but sadly it’s so thin and delicate that it shreds as you peel it out of the package. Perfect for sandwiches or putting on top of things, but not ideal to wrap juicy slices of cantaloupe with.
