Boissier is a Parisian confectionery institution that has been in business for over 200 years. The company was founded in 1827 by Bélisaire Boissier, a young man who dreamed of becoming a confectioner. Boissier quickly became known for his innovative creations, including marrons glacés (glazed chestnuts) and boules (smooth, fruit-filled bonbons).

Boissier developed a luxurious natural confectionery with flowers and fruits, celebrated by Victor Hugo, Émile Zola, Alexandre Dumas, and which already delighted the beautiful elegantes of Paris.
