Devil's Gulch Ranch feeds their rabbits a pelleted feed, free from corn, hormones and antibiotics, from a local mill along with grass and hay to ensure complete nutrition. The rabbits are selectively bred to be of excellent quality, large-framed and meaty. They are a combination of three breeds: Rex, New Zealand and Californian. Try it cooked in milk, stewed and, of course, fried Tuscan-style. Thanks to its delicately-flavoured yet gamey meat, rabbit teams up perfectly with green olives.
