The much anticipated anchovy season is here! A member of the herring family, fresh anchovy is a forage fish, slim, slivery and oily, fresh caught in the Black Sea by fishermen who leave their nets to cool waters. There are many recipes celebrating anchovies in the Black Sea region, from fried anchovies, to anchovies poached in vine leaves, from anchovy bread to hamsi pilavi, delicious rice with pine nuts and currants, encased in anchovy fillets.

Our favorite way to enjoy them is simply poached with layers of vegetables, slices of lemon and herbs in a little water and olive oil. We find this one pot method to delicately balance the strong taste of anchovies.
