Fishwife sources their wild-caught albacore tuna from small boat fishermen in the Pacific Northwest who use rods-and-reels, each fish caught by one fishing pole, one at a time, to minimize bycatch and maximize quality control. The tuna is then brined in extra virgin olive oil, sea salt, garlic, and brown sugar. Smoked in small batches over alderwood, the smoked fish is then packed and canned by a family-owned cannery off the coast of Oregon.
