Red lentil soup, or "Kırmızı Mercimek Çorbası" in Turkish, is a staple in Turkish cuisine known for its hearty consistency, delightful flavors, and its vibrant, inviting color. In Turkey, it's traditionally enjoyed as a starter before main meals but also makes a nourishing meal on its own, often accompanied by a slice of fresh, warm bread.

The origin of lentil cultivation can be traced back to Anatolia (modern-day Turkey), where it has been consumed for thousands of years. Lentils were a critical food source for ancient civilizations like the Hittites, who recognized their nutritional benefits.

Our Turkish red lentil soup recipe offers a journey into this culinary tradition, infusing the hearty red lentils with aromatic spices, vegetables, and a tangy lemon finish.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Serves: 4-6

Ingredients:

  • 1 cup red lentils
  • 1 large onion, chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 4 cloves of garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 5 cups of vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges and fresh mint leaves for serving

Cooking Instructions:

  1. Rinse the lentils under cold water until the water runs clear.
  2. Heat the olive oil in a large pot over medium heat. Add the onions, carrot, and potato, cooking until the vegetables have softened.
  3. Add the garlic, tomato paste, cumin, and paprika, stirring until the spices are well incorporated and fragrant.
  4. Add the lentils and broth to the pot, then season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat, cover the pot, and allow it to simmer for about 20-30 minutes until the lentils are tender.
  6. Using an immersion blender or a countertop blender, blend the soup until it's smooth. If using a countertop blender, ensure the soup has cooled a bit and be careful when blending hot liquids.
  7. Adjust seasonings if necessary, then serve the soup warm with a squeeze of lemon and a garnish of fresh mint leaves.

Q&A:

Can I make this soup without blending it?

Absolutely. While blending gives the soup a smooth consistency, you can also enjoy it unblended if you prefer a chunkier texture.

Can I freeze this soup?

Yes, this soup freezes well. Just make sure to cool it completely before transferring it to freezer-safe containers. It can be stored in the freezer for up to 3 months.

I don't have red lentils. Can I use other types of lentils?

While red lentils are traditionally used and provide a unique flavor and texture, you can use other lentils. Keep in mind that green or brown lentils may require a longer cooking time.

Can I add meat to this soup?

Traditionally, Turkish red lentil soup is a vegetarian dish, but you can certainly add meat if you prefer. Diced chicken or lamb would be delicious additions.
