2.5 lb. Arrives frozen.
Bresses are considered the most delicious chicken in the world. With light, thin, skin and firm yet luxurious meat, it is said that the flavor is nothing like the commercially raised poultry from the local grocery store. They have a genetic lineage that allows them to metabolize their food in a unique way which helps to create a different flavor as well as meat, and fat, growth pattern. With their thin and dainty bones and excellent meat to bone ratio, this chicken deserves to be the centerpiece for your next dinner party.
really delicate chicken
My first time cooking Bresse: It came out great. I cooked at 480° F -- for about 10 minutes... About 20% done... Then I turned off the oven* and let it coast till it hit an internal temperature of 139° F... it's the full bird, head, neck, feet, liver, and gizzards, etc. A few very tiny feathers you need to pluck.. took about 36 hours to defrost in the refrigerator at which point it was at an internal temperature of 30° Fahrenheit. That's the internal temperature when I started cooking.
Didn’t expect feet and head!
