Smaller than expected

Surprised when we found head included. Meat is slightly more dense than most chicken. We love to support local.

really delicate chicken

My first time cooking Bresse: It came out great. I cooked at 480° F -- for about 10 minutes... About 20% done... Then I turned off the oven* and let it coast till it hit an internal temperature of 139° F... it's the full bird, head, neck, feet, liver, and gizzards, etc. A few very tiny feathers you need to pluck.. took about 36 hours to defrost in the refrigerator at which point it was at an internal temperature of 30° Fahrenheit. That's the internal temperature when I started cooking.

Great flavor- not a lot of meat

It is delicious. However the meat to bone ratio was not as described and was mostly bone and about a cup and a half of meat. 3 stars for the price to meat ratio. Maybe we got a an anomaly of a hen.

small flavorful bird

If you've ever eaten chicken raised in someone's backyard on real food this is what that chicken tastes like. However the bird was too small for roasting or frying so I made a flavorful chicken soup.
