A popular winter dish originating in southeastern Turkey, dried eggplant dolma is a delicacy saved for special occasions. Batches of fresh eggplants are hollowed out at peak season, lined from strings and dried under the sun. The result is a base with a more concentrated flavor reminiscent of sun-dried tomatoes with a hint of smoked spices. The eggplants are then blanched until soft and stuffed with a spiced herbed rice filling that is sweetened with currants with just the right amount of lemony tang and a drizzle of pomegranate molasses. Serve chilled with a slice of lemon for the perfect balance of sweet & sour with each bite.
