We’re Minnow, a tinned seafood company founded by the team behind NYC restaurants Hart’s, Cervo’s and The Fly. Our focus is sustainably sourced, traceable seafood that is preserved and packed in tins by the best canneries around the world. 4.3oz. The butter of the sea – from the clear, cold waters of Iceland’s Westfjord region, sustainably sourced wild cod is caught and brought to the cannery in Isafjordur. While the filets of the fish are prepared to be sold fresh, the livers are preserved through canning. The liver is cut and seasoned with salt, and in the canning process its rich oil is expelled and fills the can. This rich, buttery delicacy is full of Omega-3s and both Vitamins A and D. When we aren’t eating this with a spoon right out of the can (seriously!) we like to spread it on toast with sea salt, lemon and herbs. Cod Liver

4.2oz. These small (or young) sardines are caught in the Mediterranean Sea and then brought to the cannery on the coast of Bizkaia, Spain. Here they are cleaned, steamed and packed in the traditional manner - all by hand - with high quality olive oil and sea salt. These small, tender, oily fish are perfect right out of the tin and are ready to use in countless preparations – try them with fried eggs, drizzling the oil from the can on top. Or, use them in a sandwich with crunchy pickled vegetables, aioli and herbs. 7.5oz. Alaska's Bristol Bay is home to both the largest wild sockeye salmon run, and one of the most sustainably managed fisheries in the world. The salmon is cut into “filets” with the backbone in and skin on, with only salt added. During canning the natural oils are expelled, filling the tin and keeping the fish moist. The skin and bones are kept in as they break down easily, providing both nutrients and flavor. Use it right out of the can in fresh fish salads in the place of higher mercury fish like tuna. Break it into pieces over chilled noodles or fry up salmon cakes and croquettes. Wild Sockeye Salmon

4.1oz. These mussels are grown in the clear waters of the Galician Rías, inlets along Spain's Western coast. Lightly fried and then packed in escabeche (a blend of vinegar, olive oil, bay leaf and spices). There are between 12-16 small, tender mussels, delicious eaten right out of the tin with fresh bread to sop up all the juice. Serve them alongside boiled potatoes & aioli, or lightly tossed with fresh pasta noodles. Perfect for a picnic, all you need are a few toothpicks!
