Acme's loaf studded with walnuts begins with their signature ‘Pain au Levain dough’ with the addition of chopped fresh California walnuts. The walnuts react naturally with the Levain starter during the baking process and give the crumb of the loaf a slightly purple hue. The baker gives it a criss-cross score on top to allow it to open during the baking process and the resulting crumb is crispy robust yet moist and tangy.
