Known as the most flavorful and fattiest part of the fish, these cuts hold up great to broiling in a hot oven, or on a nice hot cast-iron pan. Just roast with salt and pepper then finish with lemon or lime and a touch of soy or any preparation that highlights its texture and fatty flavor.

These were delicious marinated in soy sauce and rice wine vinegar sautéed with green onions. Served over rice with shredded cabbage, steamed bok choy, and julienned carrots. Note these are *very* fatty, so you’ll want the rest of the meal to be very lean (like rice and veggies).
